Scoville scale
The Scoville scale is a measure of the hotness or piquancy of a chili pepper. These fruits of the Capsicum genus contain capsaicin, a chemical compound which stimulates chemoreceptor nerve endings in the skin, especially the mucous membranes. The number of Scoville heat units (SHU) indicates the amount of capsaicin present. Some hot sauces use their Scoville rating in advertising as a selling point.
The scale is named after its creator, American chemist Wilbur Scoville, who developed a test for rating the pungency of chili peppers. His method, which he devised in 1912,[1] is known as the Scoville Organoleptic Test. An alternative method of quantitative analysis, known as high-performance liquid chromatography, directly measures capsaicinoids and attempts to relate the measured concentration in ppm to the Scoville scale using a mathematical conversion factor of 15, 20 or 30 depending on the capsaicinoid[2].

Husband and wife team Danny and Marie Lena—the dream duo behind Papa Lena's notorious veggie chips—introduce a new item to their line of healthy foods: beet hummus. Available in three different flavors—mild, garlic and spicy hot garlic—the creamy, rose-colored dip mixes traditional, all-natural hummus with Papa Lena's crushed and powdered beet chips.
"My grandfather told us never to waste anything," says Danny. "So, by using our own surplus beet chips that don't make it into the stores, we're not wasting anything."
Family traditions have always played a central role in the Lenas' business. For instance, the process for making the oven-roasted veggie chips—crispy, locally grown beets, poblanos, red bell peppers and sweet peppers—originated with Danny's grandfather in Calabria, Italy. Every fall after Danny turned 10, he helped his grandfather prepare the vegetables in a shedini (little shed) on their farm in Des Plaines, Illinois; come December they transformed the seasoned veggies into crispy chips and then served them to their family. Over the past 40 years, Danny continued the tradition, concocting thousands of chip-based recipes for his friends and family to enjoy.
Reflecting on their various careers at the age of 50, Danny and Marie literally cooked up a new recipe for success. Fortunately Danny and Marie have years of entrepreneurial experience under their belts, including 23 years of touring nationally as motivational speakers. They took their own advice that anything is possible and started churning out thousands of batches of chips in 2005.
Steadfast and determined, the couple went from working out of their home kitchen for their first event to selling at farmers' markets and renting kitchen space at Kitchen Chicago to accommodate the rapidly increasing number of chips orders from around the city. High-end, cutting-edge restaurants around the city, including Avec and Blackbird started using the veggie chips as a flavorful garnish and recipe ingredient. They also added other items such as Lemoncello cake, made-to-order Sicilian pizza and garlicky Roasted Red Pepper dip, to the mix. In 2006 they opened their own storefront at 1438 W. Chicago Avenue. Keeping up with the constant flow of orders for a mom-and-pop business has been a challenging task but one Danny and Marie welcome with open arms.
They're confident that their new hummus will keep the Papa Lena buzz alive, not to mention spice up quite a few hummus-lovers' kitchens. The ingredients and cooking processes for all of their products reflect not only the Lenas' commitment to family tradition but also health-conscious living (a lifestyle with which Marie particularly identifies as a former body builder and still-practicing personal trainer). As a result, every Papa Lena's veggie chip product is trans-fat-free. Hummus, dairy dips and chips are also gluten-free.
